Celery Vinaigrette

Celery Vinaigrette (vee-nay-gret) is a fresh cool, crisp salad to serve with cold meat or smoked fish.

6 tablespoons olive oil

3 tablespoons wine vinegar

2 teaspoon salt

½ teaspoon black pepper

1 large head of celery, washed and dried and divided into stalks, with the leaves removed and cut into slices

In a small mixing bowl, combine the oil, vinegar, salt and pepper with a fork until the ingredients are well mixed.

Place the celery in a serving dish and pour the dressing over them. Alter-natively, the dressing may be served separately

in a sauce boat.
