Creamed celery makes a delicious vegetable dish and can be served with meat or game. It is especially good zvith steak or chops.
2 medium-sized heads of celery
(or about 12 stalks) 1½ oz. butter
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped onion 4 fl. oz. single cream mixed with
flour 4 fl. oz. chicken stock
Prepare and parboil the celery. Drain well and cut the celery stalks into -inch pieces.
In a medium-sized saucepan melt the butter over low heat. Add the celery, salt and pepper. Cover the pan tightly and simmer the mixture for 15 minutes, shaking the pan from time to time. Add the chopped onion to the celery and simmer for a further 5 minutes. The mixture should be almost dry at this point.
Add the cream and flour mixture and the chicken stock to the pan. Stirring continuously with a wooden spoon, bring to the boil over moderate heat. Cook for 1 to 2 minutes or until the sauce thickens and becomes smooth. Serve immediately.
