Cayenne is a bright red, finely ground, pungent powder made from the seeds and dried pods of various capsicums. It is supposed to have originated in the district of Cayenne in French Guiana but is now also grown in other tropical countries.

It is used to flavour oysters, meat stews, cheese dishes, fish and game.
