Cauliflower with Mustard Sauce

A piquant mustard sauce makes this cauliflower dish a delicious accompaniment to grilled meat or fish.

1 cauliflower

2 teaspoons butter

2 teaspoons flour

6 fl. oz. milk

4 teaspoons prepared mayonnaise

3 teaspoons dry English mustard

1½ teaspoons lemon juice

1 teaspoon cayenne pepper

Prepare and boil the cauliflower. Drain it well and place it on a serving dish. Set aside and keep hot.

Melt the butter in a medium-sized saucepan over low heat. Remove the pan from the heat and add the flour, stirring with a wooden spoon until it forms a roux, or paste. Add the milk, a little at a time, stirring continuously until the mix-ture

is smooth and thick. Return the pan to the heat.

Add the mayonnaise, mustard, lemon juice and cayenne pepper, stirring con-stantly. Continue to cook, and stir, for 1 to 2

minutes. Pour the mustard sauce over the cauliflower.
