The catfish is one of the most popular food-fishes in North America, where it is commercially farmed. There are several
varieties of catfish, ranging in size up to 150 pounds or more – the best size for eating is from 1 to 2 pounds. It
derives its name from the long whisker-like barbels on either side of its mouth. In the southern United States catfish and hush puppies (fried cornmeal puffs) is a traditional dish in the same way that fish and chips is in Britain.
