Cardamom Honey Dressing

This nourishing and unusual dressing may be served with fresh fruit salad and melon or with waffles or pancakes. Use a blender or beat by hand with a wire whisk or rotary beater.

2 teaspoon cardamom seeds 10 fl. oz. clear honey

2 tablespoons lemon juice ;V teaspoon orange-flower water

Place the cardamom on a sheet of greaseproof or waxed paper and fold the paper over the cardamom, so that it is completely

enclosed. With the back of a wooden spoon, coarsely crush the cardamom seeds.

These Scandinavian Cardamom Biscuits and Cake are delicious served with tea or coffee.

In a blender, blend the honey at high speed until it is light in colour. Gradually add the lemon juice and orange-flower

water to the honey, and then stir in the crushed cardamom. Pour the dressing into a screw-top jar and use it as required.
