A cake mix is a commercial preparation to which only water, milk or an egg is added before baking. A great variety of cake
mixes are available and they gener-ally contain a special type of fat, which will not become rancid, flour, sugar, a raising agent, flavouring, sometimes milk powder, and, occasionally, preservatives. Cake mixes may be more expensive than
home-made cakes, but they save preparation time. They are always suc-cessful if the directions are followed exactly.
