Cabbage in Orange Juice

An unusual and interesting way to prepare cabbage, Cabbage in Orange Juice goes well with most meat dishes.

2 oz. butter

1 medium-sized green cabbage, coarsely shredded

2 tablespoons sugar

2 tablespoons lemon juice

1 teaspoon salt

is coated with the butter. Add the sugar, lemon juice, salt and pepper. Stir to mix well and then add the orange juice.

Reduce the heat to low and simmer slowly, uncovered, stirring occasionally, until the cabbage is tender but still crisp.

Taste and add more salt and pepper if necessary. Turn the cabbage into a warmed serving dish and serve im-mediately.

Cabbage and Lamb Hot Pot

This tasty, easy-to-make Cabbage and Lamb Hot Pot is a satisfying dish to serve for a family lunch or supper. It may be

accompanied by boiled rice or new potatoes.

1 tablespoon vegetable oil or butter

4 large lamb chops

1 medium-sized green cabbage, coarsely shredded

1 teaspoon salt

½ teaspoon freshly ground black

pepper

½ teaspoon dried rosemary 5 oz. canned tomato puree 2 fl. oz. water

In a large saucepan, heat the oil or butter over moderate heat and brown the chops for 3 minutes on both sides. When they are browned, add the shredded cabbage, salt, pepper, rosemary, tomato puree and water and stir well.

Reduce the heat to low and cook for 45 minutes, or until the meat is tender when pierced with a fork and the cabbage is translucent.

Serve immediately.

Cabbage and Pepper Salad

This tasty and attractive cabbage and pepper salad is ideal to serve with meat or chicken when salad greens are not

available.

1 red pepper, white pith removed, seeded and finely sliced 1 green pepper, white pith removed, seeded and finely sliced 6

to 8 spring onions , finely chopped 1 cucumber, cut into ½ inch cubes

1 lb. tomatoes, finely sliced

½ white cabbage, coarse outer leaves removed, washed and finely sliced

2 tablespoons clear honey

juice of 1 lemon

10 tablespoons oil 4 tablespoons vinegar 2 teaspoons salt

1 teaspoon freshly ground black pepper

Combine the peppers, spring onions , cucumber, tomatoes and cabbage in a large salad bowl.

Put the honey, lemon juice, oil, vinegar, salt and pepper into a screw-top jar and shake it until the dressing is well mixed.

Pour the dressing over the salad just before serving and toss well.
