Brine is a solution of sea-salt and water to which is often added sugar, saltpetre and herbs and spices. The brine is boiled, cooled and then poured over the food which is to be preserved. Six days of soaking in brine are necessary in

summer and eight in winter.

The proportion of salt to water will vary according to the type of food being preserved.
