Unusual and tasty, this Brazil Nut Stuffing is excellent for chicken or turkey. The stuffing may be prepared a day in
advance and kept covered in the refrigerator.
4 oz. butter
6 oz. mushrooms, finely chopped
4 celery stalks, finely chopped
4 oz. Brazil nuts, chopped 2 medium-sized onions, chopped
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme 6 oz. fresh breadcrumbs 1 egg, lightly beaten juice of ½ lemon
In a medium-sized saucepan melt the butter over moderate heat. When the butter foam subsides, add the mush-rooms, celery, Brazil nuts, onions, salt, pepper and thyme. Cook for 10 minutes, stirring frequently.
Turn the mixture into a medium-sized mixing bowl and add the breadcrumbs, beaten egg and lemon juice. Stir the mixture
with a fork until all the ingredi-ents are well combined.
