Bistecca alia Fiorentina

Bistecca alia Fiorentina (bee-STEKH-kah AHL-lah fee-oh-ren-TEE-nah) is a traditional Italian dish. It may be served with a salad or green vegetable.

Bistecca alia Pizzaiola is a colourful Neapolitan dish of steak with a tomato, garlic and olive sauce.


2 lb. T-bone, sirloin or round steak, cut

1-inch thick

1 teaspoon salt

1 teaspoon freshly ground black pepper

3 tablespoons olive oil

3 tablespoons red wine vinegar

1 bay leaf

1 teaspoon thyme garlic cloves, crushed

1 teaspoon dried oregano

1 tablespoons chopped parsley

5 fl. oz. dry red wine

Place the steak in a long, shallow dish. Mix the olive oil, vinegar, bay leaf, thyme, garlic, oregano, parsley and wine in a small bowl. Pour the marinade over the steak. Cover and leave at room temperature for 5 hours or in the refrigerator for 8 hours. Turn the steak and baste every hour or so.

Preheat the grill to its highest temperature.

Remove the steak from the dish and discard the marinade. Pat the steak dry with kitchen paper towels because the meat will not brown if it is too damp. Sprinkle the pepper on to the steak.

Grill the steak for about 4 minutes on each side or longer depending on whether you like your steak rare, medium or well- done.

Transfer the steak to a heated serving dish, sprinkle with salt and serve.
