Bird’s Nest

The nests of the salangane, a type of swallow or swift, are particularly enjoyed by the Chinese. The salangane makes its nest in the coastal grottoes of China and the East Indies, building it with its own thick, glutinous saliva, rich in protein. Salangane nests are added to soup, where they impart a rich and spicy flavour.
