Beurre au Citron

Beurre au Citron (bur oh see-trawn) is a cold lemon butter which is used to garnish cold hors d’oeuvre. The term may also refer to a hot lemon butter sauce.

6 oz. butter rind of

1 lemon, finely grated

½ teaspoon salt

½ teaspoon white pepper

In a small bowl, beat the butter with a wooden spoon until it is well creamed. Beat in the lemon rind, salt and pepper.

Push the mixture through a fine sieve. Cover and chill.
