Beetroot and Apple Salad

This wiusaal salad of raw, grated beetroot and apple, with a piquant horseradish dressing, may be served with other salads for a vegetarian meal or as an accompaniment to cold roast meat.

3 raw medium-sized beetroots

3 medium-sized cooking apples

2 oz. sultanas or raisins

1 tablespoon horseradish sauce

3 tablespoons vegetable oil

1 ½ tablespoons wine vinegar

1 teaspoon sugar

1 teaspoon salt

2 teaspoon freshly ground black pepper

Peel the beetroots and coarsely grate them into a salad bowl. Core the apples and coarsely grate them into the salad bowl.

Mix in the sultanas.

Make the dressing by mixing all the remaining ingredients in a small bowl. Pour the dressing over the salad, toss lightly and serve.
