A deliciously crisp, quickly made vegetable dish, Bean Sprouts with Ginger must be cooked just before serving.
3 tablespoons cooking oil
1 large onion, finely sliced
1-inch piece of fresh ginger, peeled, finely sliced and cut into thin strips
1 teaspoon salt
1 lb. fresh bean sprouts
Heat the oil in a large frying-pan over high heat. Add the onion, lower the heat to moderate and fry for 6 minutes, stirring occasionally with a wooden spoon. Add the ginger and continue frying for another 4 minutes.
Add the salt, stir to mix and add the bean sprouts. Raise the heat and, turning and tossing the bean sprouts, fry them for only 2 to 3 minutes.
