Bean Curd

Square, custard-like cakes of cooked, pureed and pressed soya beans, bean curd is sold in Oriental provision stores.

The cakes, which are about |–inch thick and 3-inches square, should be drained and stored in fresh water in a covered jar in the refrigerator. They will keep for up to two weeks if the water is changed every day. There is no substitute for fresh bean curd in Chinese cooking.
