Tomatoes and onions with basil make a fragrant and tasty accompaniment to roast pork, lamb or chicken.
4 SERVINGS
3 oz. butter
2 large onions, thinly sliced and separated into rings
10 large tomatoes, thinly sliced
2 tablespoons chopped fresh basil, or
2 teaspoons dried basil
6 grindings black pepper
1 teaspoon salt
1 teaspoon sugar
3 oz. fresh breadcrumbs
Preheat the oven to fairly hot
400 F (Gas Mark
6,
200’C). Lightly grease an ovenproof dish with
1 tablespoon butter. Melt
2 tablespoons butter in a large frying-pan over low heat. Put in the onion rings and fry them for
10 minutes, or until they are tender but not brown.
Remove the frying-pan from the heat.
Put a layer of onion rings on the bottom of the ovenproof dish, sprinkle with a little basil and cover with a layer of tomato slices. Add a little pepper, salt and a sprinkling of sugar. Dot with 1 tablespoon butter, cut into small pieces. Repeat the layers until all the ingredients have been used.
Cover the top with breadcrumbs and dot with the remaining butter. Place the dish in the oven and bake for 30 minutes.
Serve hot.
