This is an extremely easy and, at the same time, a very tasty way of preparing veal chops. For average size chops
20 minutes grilling is just right, but adjust the timing for very thick chops. Serve with a green vegetable.
4 veal chops
1 onion, chopped garlic clove, crushed
1 teaspoon ground coriander
1 teaspoon dried mixed herbs
½ teaspoon chilli powder
1 tablespoon chopped parsley
1 teaspoon salt
½ teaspoon black pepper
3 tablespoons olive oil
2 tablespoons vinegar
1 tablespoon tomato puree
Put the veal chops in a shallow dish. Mix all the remaining ingredients in a small mixing bowl and pour over the chops.
Leave the meat to marinate for 3 hours at room temperature.
Heat the grill to hot. Remove the chops from the marinade and place them under the grill for 2 minutes. Lower the heat to moderate and cook for 8 minutes, marinating whenever the meat looks dry.
Turn the chops over and spread with the remaining marinade. Raise the heat to high again and grill them for 2 minutes.
Lower the heat and continue grilling for 8 minutes more. Serve immediately.
