Barbecued Beef, Chinese Style

Chinese Barbecued Beef is served on a bed of fried spinach. It is a dish which is delicious and pleasing to the eye.

3 tablespoons soy sauce

3 tablespoons red wine 1-inch piece of fresh ginger, peeled and grated 2 teaspoons brown sugar

½ teaspoon cayenne pepper

½ teaspoon black pepper

1 lb. fillet of beef, cut into -inch


8 tablespoons vegetable oil

2 lb. spinach, washed and stalks


1 teaspoon salt

In a large bowl, combine the soy sauce, wine, ginger, sugar, cayenne and black pepper. Add the beef slices and leave to

marinate for 2 hours, basting and turning them occasionally.

In a large, heavy frying-pan, heat 6 tablespoons of oil. Add the beef and, stirring frequently, fry over moderate heat for

5 to 10 minutes, depending upon how rare or well-done you want the meat.

In another heavy frying-pan heat the remaining oil and, stirring frequently with a wooden spoon, fry the spinach until it is tender. Roughly chop the spinach. Add the salt and mix well.

Arrange the spinach on a serving plate and spread the fried beef over it. Pour the beef juices over the spinach and beef.

Serve hot.
