This is a good piquant sauce to serve hot with grilled meal or chicken. It can also be used for basting during grilling.
8 FLUID OUNCES
1 oz butter
1 onion, chopped
1 garlic clove, crushed
2-inch piece fresh ginger, peeled and finely chopped 5 fl. oz. water 14 oz. canned tomatoes
large celery stalk, chopped
1 tablespoons lemon juice
2 tablespoons vinegar
2 tablespoons tomato puree X tablespoons Worcestershire sauce 2 teaspoons brown sugar 2 teaspoon dried oregano 1 large
1 teaspoon salt
½ teaspoon nutmeg
Melt the butter in a small saucepan over moderate heat. Add the onion, garlic and ginger and fry until the onion is soft and translucent.
Add all the remaining ingredients, cover and cook over low heat for 40 minutes. Strain the sauce, taste, and add more salt and sugar if necessary.
