Easy to make, Bananas with Orange is delicious dessert which should be served very hot with chilled orange butter and sponge fingers, shortbread or other plain, szveet biscuits .
4 oz. butter
4 oz. plus 4 tablespoons
soft, brown sugar
grated rind of 1 orange 3 fl. oz. Cointreau 8 bananas
5 oranges
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Make the orange butter first. In a medium-sized mixing bowl, cream the butter thoroughly with a wooden spoon. Slowly add 4 ounces sugar and the grated orange rind and beat well. Add 2 fluid
ounces of Cointreau, beating until the mixture is smooth and all the liqueur is absorbed. Cover and refrigerate.
Peel the bananas and cut them into slices. Peel the oranges, remove all the pith and cut them into thin slices.
In an ovenproof dish, arrange the banana and orange slices in layers, sprinkling each layer with the remaining sugar. Add the remaining Cointreau. Bake in the oven for 25 minutes. Serve immediately with the orange butter.
