Bananas Caribbean

This spicy banana dessert is unusual and easy to make. Serve it with a creamy custard sauce or thick cream.

2 tablespoons plus

1 teaspoon butter

6 bananas

2 oz. soft brown sugar

4 fl. oz. fresh orange juice grated rind of

1 orange

½ teaspoon powdered cinnamon

4 tablespoons Curacao

6 tablespoons rum

Preheat the oven to very hot 450C’F (Gas Mark 8, 230°C). Grease a medium-sized baking dish with 1 teaspoon of butter.

Peel the bananas. Cut them in half lengthways. Place the bananas in the baking dish cut side up.

In a small bowl, mix together the sugar, orange juice and rind, cinnamon and Curacao. Pour the mixture over the bananas. Dot with the remaining butter and bake, basting once, for 15 minutes or until the bananas are tender. Sprinkle the bananas with the rum and serve immediately.
