A rich dessert, Bananas Beauharnais (bow-ahr-nay) is excellent for a lunch or dinner party. It is usually served hot, but it is equally good cold.
1 tablespoon castor sugar
6 tablespoons white rum
4 oz. crushed macaroons
1 tablespoon melted butter
10 fl. oz. double cream
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Grease a medium-sized baking dish with a little butter.
Peel the bananas and put them in the baking dish. Sprinkle them with the sugar and the rum. Bake for 15 minutes.
Remove the dish from the oven and allow to cool for 10 minutes.
Reset the oven to warm 325 F (Gas Mark 3, 170°C).
Mix the crushed macaroons with the melted butter. Pour the cream over the bananas. Sprinkle the macaroon mixture on top of the cream. Return the dish to the oven and bake for another 20 minutes. Serve hot in the baking dish.
