Bananas baked in their skins make an unusual and delicious accompaniment to roast or fried chicken, roast pork or baked fish.
6 large bananas, unpeeled
1 tablespoon vegetable oil
Preheat the oven to warm 325 °F (Gas Mark 3, 170°C).
Rub the banana skins lightly all over with a little oil. Brush the bottom of an ovenproof dish with the remaining oil. Lay the bananas in the dish and place it in the centre of the oven.
Bake the bananas for 30 to 40 minutes or until they are soft and their skins turn black.
Serve hot with one strip of peel rolled back.
