A simple, uncooked dessert with a fine balance of flavours, this may be served at lunch or dinner party.
6 bananas 1 lb. raspberries 10 fl. oz. double cream 4 tablespoons castor sugar
Peel the bananas and cut them into rounds. Arrange the slices in a dish.
Mix the raspberries with the cream and push the mixture through a sieve. Mix in half the sugar. Taste to check the sweetness and add the rest of the sugar if necessary. Pour the cream mixture over the bananas. Chill well before serving.
