A Chinese dish, Bamboo Shoots with Pork is delicious served with other Chinese dishes and boiled rice or fine egg noodles.
As is the case in many Chinese recipes, the pork, leek and bamboo shoots must be shredded. This means that they must be cut into fine, thread-like strips.
1 ½ lb. lean pork, shredded
6 tablespoons soy sauce
1 tablespoon sherry
1 teaspoons cornflour
1 leek, shredded
1 lb. canned bamboo shoots, shredded
5 fl. oz. groundnut oil
2 teaspoons sugar
2 tablespoons of soy sauce, the sherry and cornflour. Add the shredded pork and mix well.
Heat a large, heavy frying-pan over high heat for 30 seconds. Add the oil and swirl it around the pan.
Add the pork and the leek and, stirring frequently, fry for 5 minutes, or until the pork is well browned. Stir in the bamboo shoots.
Stir in the remaining soy sauce and sugar. Lower the heat and simmer for 10 minutes, stirring frequently.
