A rich cake made of thin layers of crisp pastry, filled with chopped almonds or walnuts and steeped in syrup or honey, baklava is made throughout the Middle East and Greece.

Baklava varies in detail from country to country, town to town and even from one household to the next. But in one respect it must always be the same. The pastry must be paper thin, for that is the secret of good baklava.
