Au Beurre Noir

Au beurre noir (oh burr nwahr) is the French description of a dish served with black or nut-brown butter. Black butter is made by cooking butter in a pan until it becomes dark brown. Vinegar, salt and pepper are added and the sauce is then cooked until it is reduced by half. Beurre noir is used as a sauce for eggs, fish and some vegetables.
