A South African pudding, Asynpoeding (ah-sane-poo-ding) is an unusual ginger flavoured dessert baked with a vinegar flavoured syrup. Serve hot with custard.
6 oz. butter
6 oz. sugar
½ teaspoon salt
14 oz. sifted flour
2 teaspoons ground ginger
2 teaspoons bicarbonate of soda a little milk
6 oz. pineapple jam
1 pint cold water
4 fl. oz. white vinegar
12 oz. sugar
Preheat the oven to fairly hot 400°F (Gas Mark 6, 200°C).
In a medium-sized mixing bowl, using a wooden spoon, cream the butter well and gradually add the sugar. Beat in the eggs, one at a time, beating thoroughly. Sift in salt, flour, ginger and mix.
In a small bowl, blend the bicarbonate of soda with a little milk and add to the egg-and-flour mixture.
Blend the ingredients into a dough. On a floured surface, roll out the dough into a rectangular shape, about 5 inches wide and 12 inches long. Spread the dough evenly with the pineapple jam and roll up as for a jam roll. Cut into 2-inch slices and place on the bottom of an ovenproof casserole dish.
Mix the cold water, vinegar and sugar together. Pour over the pudding in the casserole. Cover and bake in the centre of the oven for ½ hours. Serve im-mediately.
