Apricot Glaze

Jam glazes are used to give a glossy surface to fruit flans and tarts. In classic recipes, apricot jam forms the basis of the glaze for yellow fruits.

4 FLUID OUNCES

4 tablespoons apricot jam

3 fl. oz. water

1 teaspoon lemon juice

Combine the jam and water in a small saucepan. Stirring, cook over moderate heat for 5 minutes. Add the lemon juice and stir well. Remove from the heat and strain.
