Apple Fritters

This inexpensive and easy-to-make dessert is a favourite zuith children. Other fruits, such as bananas, apricots and pineapple rings, may also be used.

4 oz. flour a pinch of salt

2 egg yolks, plus

1 egg white

1 tablespoon cooking oil

5 fl. oz. milk

1 lb. cooking apples juice of

1 lemon castor sugar

4 oz. butter or cooking fat

Sift the flour and salt into a medium-sized mixing bowl. Make a well in the centre of the flour and put in the eggs and the oil. With a wooden spoon, mix the eggs and oil, slowly incorporating the flour and gradually adding the milk. Mix to a smooth batter, then beat well. Cover and keep in a cool place for 30 minutes.

Peel and core the apples and slice into rings -{-inch thick. Lay the apple rings on a plate and sprinkle with lemon juice and castor sugar.

Heat the butter or fat in a large frying-pan over high heat. Using a skewer, dip the apple rings into the batter and drop them one by one into the hot butter. Cook the rings on both sides until they are golden brown. Arrange on a plate and dredge with castor sugar. Serve at once.
