This is an excellent stuffing for goose. It should be well seasoned, so taste it before using and add more salt and pepper if necessary. This quantity is sufficient for one goose.
1 oz. butter
1 lb. onions, peeled and sliced
1 lb. apples, peeled, cored and finely sliced juice of 1 orange 3 parsley sprigs 6 leaves fresh sage or 1 ½ teaspoons dried sage
1 teaspoon salt freshly ground black pepper 1 lb. potatoes, boiled and mashed grated rind of 1 orange
Melt the butter in a medium-sized sauce-pan over moderate heat. Add the onions and saute until they are soft but not brown. Add the apples, orange juice, parsley, sage, salt and 7 grindings of pepper. Cook until the apples are soft.
Press the apple and onion mixture through a sieve and mix well with the Flavoured with sage and onions and topped with mashed potatoes, Apple and Pork Casserole is easy to make. mashed potatoes and grated orange rind to make a fairly firm stuffing. Taste and correct seasoning if necessary.
