A simple, fresh salad, this is a good ac-companiment to cold fowl, fish or meat.
1 lb. crisp dessert apples small cucumber juice of
1 teaspoon salt
2 grindings black pepper
2 fl. oz. double cream , whipped lettuce leaves, washed and dried
Peel, core and cut the apples into thin slices. Put the apple slices in a dish and sprinkle with the lemon juice to prevent them from discolouring.
Wash the cucumber and cut it into thin slices. Add the slices to the apple in the bowl. Sprinkle with salt and pepper.
With a spoon, gently toss the apple and cucumber slices so they are evenly mixed. Stir in the whipped cream.
To serve, line a salad bowl with lettuce leaves. Pile the apple and cucumber mixture in the centre.
