A very simple and tasty dish from Sweden, Appel-Flask (EHP-pel flesk) is inexpensive and easy for a busy housewife to make for lunch or supper.
2 tablespoons oil
1 lb. onions, sliced
1 lb. cooking apples, cored and sliced freshly ground black pepper
½ teaspoon dried dill (optional) I lb. bacon slices
1 tablespoon chopped parsley
In a large frying-pan, heat the oil over moderate heat. Add the onions to the pan and fry them until they are transparent.
Stir in the apples. Cover the pan and cook for about 10 to 15 minutes or until the apples are soft. Stir occasionally. Add pepper to taste and the dill, if you are using it. Transfer the apple mixture to a warmed serving dish and keep warm.
With a sharp knife remove the rind from the bacon and discard it. Wash out the frying-pan and in it fry the bacon until it is crisp. Remove the bacon from the pan and drain it on kitchen paper towels.
Mix the bacon into the apple mixture and sprinkle with the parsley.
