Aniseed makes a change of flavouring for fork biscuits which are traditionally flavoured with lemon or chocolate.
4 oz. butter, softened
2 oz. castor sugar
1 heaped teaspoon aniseed
1 large egg
5 oz. self-raising flour a pinch of salt
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Line a baking sheet with non-stick silicone paper.
Beat the butter with a wooden spoon until it is soft. Add the sugar and continue beating until the mixture is light. Mix in the aniseed. Add the egg and beat until it is well mixed. Add the flour gradually with the salt and stir in well.
Shape the dough into small balls. Place them on the baking sheet leaving space between them. Using a fork dipped in water, flatten out each ball. Bake in a moderate oven for 15 minutes.
