Another variation of Anchoyade, Anchoyade a la Nifoise (on-show-yahd ah lah nee-SWAHz) may be made with fried bread instead of toast.
2 oz. canned anchovies
1 tablespoon plus one teaspoon olive oil
½ teaspoon vinegar black pepper
8 shallots, or small onions, chopped
5 sprigs parsley, chopped
2 tomatoes, sliced
4 slices brown bread, toasted on one side only
2 tablespoons breadcrumbs
1 clove garlic, crushed
Pound the anchovies in a mortar to a paste. Add
1 tablespoon of oil, vinegar and pepper and mix well. Add the shallots and parsley, less
1 teaspoon, and spread on the toast. Place the sliced tomatoes on top. Mix the breadcrumbs, crushed garlic,
1 teaspoon of parsley and
1 teaspoon of olive oil together and sprinkle on top. Brown under a hot grill for a few minutes.
