Anchovy Rolls

These small savoury rolls can be served as canapes at cocktail parties or as an accompaniment to drinks before a dinner party. thinly sliced, 1-day-old, white bread butter for spreading hard cheese, grated prepared mustard salt and pepper anchovy fillets melted butter

Preheat oven to hot 425°F (Gas Mark 7, 220°C).

Remove the crusts from the bread. Spread each slice with butter and mustard. Sprinkle with salt, pepper and cheese. Put an anchovy fillet on each slice and roll up, securing with a wooden cocktail stick.

Prepare as many rolls as you require. Place them on a baking sheet, brush with melted butter and bake in the oven until the rolls are golden brown, about 7 to 8 minutes.

Cut each roll in half, so that they are easy to handle. Serve immediately.
