Simple to make and with a delicate flavour, this classic almond sauce for fish transforms grilled or poached fish into a special dish.
2 oz. unsalted butter
3 oz. almonds, blanched and shredded
1 teaspoon salt
Melt the butter in a small saucepan or frying-pan. Add the almonds and saute, stirring continuously, until they just begin to brown. Add the salt. Pour over the hot, cooked fish and serve immediately.
